What changed

Replaces duplicated org-level Renovate defaults with github>webgrip/renovate-config#v1.2.1.
Keeps homelab-cluster-specific settings explicit, including Docker major updates, branch automerge behavior, ignore paths, post-upgrade tasks, critical-platform gating, datasource/manager labeling, and repo-specific package rules.

Why

This makes homelab-cluster consume the shared Webgrip Renovate policy while preserving behavior that is not covered by the shared preset.
